” Pide” is typically referred to as flatbread which is simply made of flour and yeast and baked in the oven with a topping of your choice, it is typically of meat mince, spinach, or vegetables. It is part of Turkish tradition for centuries and cooked for special occasions and gatherings as a main course. It is also considered a famous and inspiring recipe for travelers coming to visit the country.
Turkish Pide
In this recipe, I have made it with chicken and vegetables and it turned out so good. This recipe is rich in flavor and ingredients can be shuffled up to your choice as you can replace chicken with cooked beef and mince. you can also make it with vegetables and use cheese on top. Ingredients:
For dough:
- All-purpose flour 300 grams
- yeast 1 tbsp
- salt 1 tsn
- sugar 1 tbn
- warm milk 2 tbsp
- cooking oil 2 tbsp
For Topping:
- chicken cubes 200 grams
- salt 1 tsn
- black pepper 1 tsn
- chilli flakes 1 tsn
- oil 2 tbsp
- onion 1 big chopped
- tomato 1 big chopped
- green chili or coriander as per choice
- oregano 1 tsn
Preparation:
In a large bowl take flour, instant yeast, salt, sugar, and oil, knead it with milk and leave covered for 20 mins. Meanwhile prepare the topping, in a pan take 2 tbsp oil and stir fry the chicken cubes on medium flame, then add spices and separate it, then add onion, tomato, and oregano, and coriander, toss it well. Check the dough and knead it for two more mins to give an even texture then divide it into four parts and give each of it a long flatbread shape, top it with the prepared mixture and turn the sides equally. Brush the sides with egg, shift it in a baking tray, and preheat oven to 180 degrees, then bake for 20 mins. Cut it into small pieces and serve.
